Method

· Thaw frozen tofu in cold water, squeeze out excess water and cut into large chunks; slice the streaky pork and cut the cabbage into strips.

· Heat a little oil in a pan, stir-fry the pork slices until fat renders out, add scallion, ginger and star anise to sauté until fragrant, then pour in light soy sauce and dark soy sauce for coloring.

· Add cabbage and stir-fry until softened, pour in water to cover all ingredients, add frozen tofu, bring to a boil over high heat, then simmer on low heat for 10 minutes.
