Pure black sesame can deliver authentic dark hue for both filling and partial wrapper systems without artificial colors, relying entirely on its intrinsic natural pigment components. The main natural dark substances inside pure black sesame are anthocyanin-class polyphenolic pigments concentrated in its seed coat. The color generated by pure black sesame is soft and matte, with slight brown undertone instead of rigid, uniform jet-black. For frozen food producers, giving up artificial colors and taking advantage of black sesame's inherent pigment composition represents product upgrading from simple color adjustment to holistic raw-material-driven flavor-color-texture integration.
